A few of the Solent racing boats that often have 6 sleeping aboard have a nice cockpit tent made but Quantum Sails (on the Hamble). It is in two sections, the front section is the length of the boom and attaches to the guard rails while the back section is attached by two long zips and is enclosed at the stern.

If you wanted to be completely enclosed you could add dodgers but then you are just camping with no way to peruse the world going by while reading the Sunday papers J.

If you do not wish to spend the sort of money that a Quantum cover costs a perfectly good alternative would be a polytarp with ‘punch in’ bits for attachments. The difficulty occurs at the end of the boom, unless you have a boom strut but even then the magic velcro comes to the rescue.
